Meal prepped this for lunch today and tomorrow, used parma ham instead of pancetta and added spinach and onion for some volume - tha flavors came together nicely, will add this to my lunch rotation for sure 😋

I don't find pasta tends to freeze very well unfortunately but you could give it a go, I'd just recommend undercooking the pasta slightly so that it's not too soft once defrosted.
