To make the pesto (these are measurements for 1 serving of pesto, I would recommend making at least 2-3 portions + storing the rest in the fridge or freezer as it is easier to blend a larger portion). Add the basil leaves (a bunch/regular supermarket packet size), parmesan, pine nuts + olive oil to a blender. Season with salt + pepper + blend. Alternatively - use a shop bought pesto (look for one with minimal ingredients / preservatives).
