Turn cooking mode on

Step 1

This recipe uses leftover roast chicken, if you don't have any available simply roast, air fry, or pan fry your chicken breast, then shred using two forks.

1 Chicken breast

To make the dressing, combine the yogurt, grated garlic, grated parmesan, olive oil, mustard, lemon juice, and a big pinch of salt and pepper.

50 g Greek yogurt

1/2 Garlic clove

10 g Parmesan

1 tsp Olive oil

1/2 tsp Mustard

1/2 Lemon

Layer your bowl with the sliced lettuce, grains, roast chicken, and sliced avocado.

125 g Mixed grains

1/2 Avocado

Step 4

Top with the creamy dressing, a crack of black pepper, and some fresh dill.

For this recipe we used a 250g pre-cooked grain packet (half a packet per portion) - which is a mixture of quinoa, bulgar wheat and barley. Most supermarkets will have a similar option, or feel free to cook your own preferred grain.

You could swap to fresh parsley if you'd prefer! and yes you could - I would store the dressing separately and add it each day, I would also add the avocado fresh each day if you can as avocado doesn't last well / browns easily xx
