Turn cooking mode on
1.
Roast or air-fry your sweet potato, sliced in half lengthways, for around 20-25 minutes or until soft. Once cooked, remove the skin and gently mash, then leave to cool.

Once the sweet potato is cooled - in a bowl combine the mashed sweet potato, drained tuna, mustard, chopped spring onion, chives, dill, whisked egg, and panko breadcrumbs. Season with a big pinch of salt and pepper. Mix well until everything is thoroughly combined.
1 x 150g tin Tuna
1 tsp Mustard
1 Spring onion
1 tbsp Fresh chives
1 tbsp Fresh dill
3 tbsp Panko breadcrumbs

Form the mixture into patties. Place in the fridge to set for at least 10 minutes.

Heat olive oil in a pan over medium heat. Add the patties and cook for a few minutes on each side until golden and hot through.

Combine the mayonnaise with chopped dill in a small bowl. Mix well and serve with the patties, alongside a wedge of lemon (optional).
