Tandoori Chicken, Spiced Roast Potatoes & Mint Yogurt

A delicious, high protein lunch or dinner. The longer you marinate the chicken the more flavour it develops, so if you're planning this for dinner - marinate it before you head out for the day if you can.

Step 1

In a mixing bowl, coat the chicken in the marinade. Cover and leave to marinate in the fridge for as long as possible (a few hours or overnight is great, however this recipe will still work well if you aren't able to marinate the chicken for long).

Notes

For the tandoori marinade, it is up to you whether you want to buy this ready made or create this from scratch. A good brand with clean ingredients and lots of flavour is Gymkhana.

Here is a recipe for a tandoori marinade (for one portion):

2 tbsp Greek yogurt, 1 tsp olive oil, 1/2 tsp minced garlic, 1/2 tsp grated ginger, 1/2 teaspoon garam masala, 1/2 teaspoon paprika, 1/4 teaspoon turmeric, 1/4 teaspoon cumin.
