Step 1
Slice the halloumi into chunks, then drizzle over the olive oil and coat in the peri peri seasoning. Leave to marinate for a few minutes whilst you prepare the other ingredients.
80 g Halloumi
2 tsp Peri peri seasoning
1 tsp Olive oil
Step 2
Add the Greek yogurt, chopped fresh herbs, lemon zest and garlic clove to a food processor with a big pinch of sea salt and black pepper, blend until smooth. If you do not have a food processor simply finely chop the herbs, grate the garlic and stir into the yogurt until well combined.
60 g Greek yogurt
1 tbsp Fresh dill
1 tbsp Fresh parsley
1/2 tsp Lemon zest
1/2 clove Garlic
Step 3
To a bowl, add the cooked grains, remaining chopped fresh herbs, a pinch of chilli flakes and a squeeze of lemon juice. Season with another pinch of salt and pepper and gently mix to combine.
125 g Cooked mixed grains
1 pinch Chilli flakes
1 tbsp Fresh dill
1 tbsp Fresh parsley
Step 4
Air-fry the halloumi for 3-4 minutes each side on 200 degrees C until golden on the outside. (Alternatively pan-fry for a couple of minutes either side).
Step 5
Once the halloumi is cooked, serve on top of the grains with a big dollop of the herby yogurt.

For the grain base we used a 250g packet of cooked mixed grains by the brand Merchant Gourmet, most supermarkets will have a similar option or feel free to cook any grains of your choice such as brown rice, pearl barley or bulgur wheat.
