Boil a pan of water, then add in the whole potatoes. Cook gently for around 7-9 minutes until the potatoes are fork tender, then drain and add to a baking tray (or air-fryer), seasoned with a drizzle of olive oil and a pinch of oregano. Roast for around 15-20 minutes until golden and crispy.
