Spiced Chicken Skewers, Buttery Herby Rice & Garlic Yogurt

Full of flavour but really simple - try this recipe for a quick meal prep lunch or dinner.

Turn cooking mode on

For the marinated chicken:

1.

In a bowl, combine the greek yogurt, cumin, paprika, turmeric and a pinch of salt and pepper. Add the sliced chicken and mix until well coated.

150g Chicken breast

1 tbsp Greek yogurt

1/2 tsp Cumin

1/2 tsp Paprika

1/2 tsp Turmeric

Air-fry or pan-fry your chicken chunks until golden and cooked through.

For the rice:

1.

Cook the rice according to package instructions, then drain. While the rice is still hot, stir in the chopped fresh parsley, pitted green olives (sliced if desired), and butter until melted, along with a pinch of salt and pepper.

1 tbsp Fresh parsley

5 Green olives

5 g Butter

For the garlic yogurt:

1.

In a small bowl, mix together the remaining Greek yogurt, minced or grated garlic, and chopped mint. Season with black pepper.

30 g Greek yogurt

1/2 Garlic clove

1 tsp Fresh mint

Serve everything with some fresh sliced red onion on the side.

If you were to prepare this for work to take with you, how would you heat it up to keep the best flavour? Or would it be good cold as well?

So you could definitely eat this cold, but if you wanted it hot I'd store the chicken and rice together & then keep the yogurt and red onion separate in a little pot ☺️
