We used a bag of cooked microwave brown rice to save cooking time with this dish. If you don't have any cooked chicken simply air-fry or roast, leave to rest and then shred.

I used left over roast chicken, but feel free to air-fry, pan-fry or roast your chicken! Then shred ☺️

New recipe looks good but thats a lot of brown rice serving for one person. Is that correct?

It's the cooked weight for the rice in this recipe ☺️ 125g is half a standard pack of cooked microwave rice (which is what I used to save time for this recipe!). Absolutely fine to cook your own, it will be *around* 50g dry - hope that helps!
