Step 1
Pre-heat the oven to 180°C (356°F).
Step 2
In an ovenproof casserole dish, heat the olive oil on low-medium heat. Add the sliced leek and season with a pinch of salt and pepper. Cook gently, stirring regularly, for around 7-8 minutes until softened.
1 tbsp Olive oil
1 Leek
Step 3
Add the diced garlic and chilli, cook for a further few minutes.
2 cloves Garlic
1 small Fresh chilli
Step 4
Pour in the tinned tomatoes and season with a pinch of salt and pepper. Fill the tin halfway with water and pour it back in to loosen the sauce. Turn the heat down and simmer gently for 10-12 minutes.
1 x 400g tin Chopped tomatoes
1 small Fresh chilli
Step 5
Stir the butter beans into the sauce and leave to heat gently.
400 g Queen butter beans
Step 6
In a small bowl, combine the panko breadcrumbs, grated parmesan and oregano to create the topping.
40 g Panko breadcrumbs
10 g Parmesan
1 tsp Oregano
Step 7
Top the saucy butter beans with the breadcrumb mixture, then finish with another drizzle of olive oil. Bake in the oven for 15 minutes or until golden. Depending on your oven, you may prefer to transfer the pan to the grill for a few minutes to get a golden top.
1 tsp Olive oil
Step 8
Serve with a handful of salad leaves or any greens of your choice, such as broccoli.

Hey! I really like the look of this, could I swap panko breadcrumbs for sourdough ones?
