Salted Pistachio Date Bars

Turn cooking mode on

Step 1

Add the whole oats, protein powder, pistachios, medjool dates, and almond butter to a food processor. Blend until the mixture is combined and sticky.

Step 2

Press into a square pan or tray, lined with baking powder. Use the back of large spoon to push the mixture down firmly for 1-2 minutes, this is an important step to make sure the bars set.

Step 3

Melt the dark chocolate & drizzle over the bars, then sprinkle with a pinch of flaky sea salt and a few more chopped pistachios.

Step 4

Chill in the refrigerator for at least 30 minutes, then slice into bars. Store in the fridge in an airtight container for 4-5 days.

Hey Joanne! Sorry for the confusion, so the recipe here makes 6 bars (unless you adjust the number yourself), but one serving is one bar yes - so the macronutrient info applies to just one bar ☺️ hope that makes sense!

Oh how annoying I've never had that issue with these, it could be that the almond butter you are using is slightly too thick - in which case try adding a dash more maple to loosen it, and also make sure to press down the mixture very firmly before setting - that should help!

I was thinking about making the mixture more wet, like soaking the dates in hot water before. But maple syrup sounds good too!
