Harissa Chicken & Herby Couscous Bowl

A really simple dish that works well for meal prep lunches.

Turn cooking mode on

For the chicken:

1.

Cut the chicken breast and red onion into even chunks. Place the chicken, red onion, Greek yogurt and harissa paste in a bowl. Mix well to coat the chicken evenly and set aside to marinate while you prepare the salad.

150 g Chicken breast

1/2 Red onion

1 tbsp Greek yogurt

1 tbsp Harissa paste

For the salad:

1.

Cook the cous cous in boiling water according to package instructions, then fluff with a fork and let it cool slightly.

35 g Cous cous

In a large bowl, combine the cooked cous cous, diced cucumber, pomegranate seeds, chopped fresh mint, and crumbled feta.

1/4 Cucumber

1 tbsp Pomegranate seeds

1 tbsp Fresh mint

25 g Feta

3.

Squeeze the lemon juice over the salad, then add a pinch of oregano and a pinch of chilli flakes. Toss everything together to combine, season to taste with salt, pepper and a drizzle of olive oil.

1/4 Lemon

1 pinch Oregano

1 pinch Chilli flakes

1 tsp Olive oil

Pan-fry or air fry the marinated chicken and onions, cooking until the chicken is cooked through and the onions are softened, about 8-10 minutes. Serve with the salad once cooked.

How long should I marinate the chicken?

The longer the better so for example if you can marinate it in the morning, pop it in the fridge and cook it in the evening that's ideal! But if you're short on time just 5-10 minutes is absolutely fine 😌

Yes 3-4 days should be absolutely fine. I usually say 3 days max to keep the dishes fresh but you could stretch to 4 I'm sure!
