Step 1

Heat the olive oil in a small pan on low-medium heat. Add in the tomatoes, either whole or halved, and season with a pinch of salt and pepper. Cook gently for 5-10 minutes until softened, gently 'squish' the tomatoes with your fork if needed. Add a squeeze of lemon juice and a pinch of chilli flakes.
