Cook gently for 5-10 minutes until softened, gently 'squish' the tomatoes with your fork if needed. Add a squeeze of lemon juice and a pinch of chilli flakes.

Really enjoyed this balanced lunch 🌱. Changed the rocket for lettuce and added some crispy chilli oil 😋
