Turn cooking mode on
Step 1
To make the herby yogurt, finely chop the fresh herbs and add half to the yogurt along with a pinch of salt and pepper.
30 g Greek yogurt
Step 2
Heat the grains as per packet instructions. Add to a bowl and allow to cool for a few minutes.
1 x 250g Packet of cooked mixed grains
Step 3
Once the grains have cooled slightly, add the remaining fresh herbs, the finely diced cucumber, garlic oil and a pinch of salt and pepper, then mix.

2 tsp Garlic oil
Step 4
Add the remaining tsp of oil to a frying pan and heat on medium. Add in the halloumi and fry for a few minutes on each side until golden, then remove from the pan and slice into cubes.

Step 5
Portion the grain salad into two bowls / jars and top with the halloumi, a dollop of herby yoghurt and the pomegranate seeds.

I wasn’t sure about the dill at first but it was actually really nice, a really nice tasty lunch.
